Story shared: Remembering . . . The world lost a great, unique, and one of a kind individual, and one of the greatest chefs in the world. Uncle Poochie always contributed and gave so unselfishly of himself, whether it was his time and effort, or by cooking, visiting, or helping in the church. He was a man of his word . . . you could always depend and rely on him. When he left us, he left a great legacy and hard shoes to fill. I can say as his brother that I am a cook; but my brother was a chef in a league of his own! He and sister-in-law Effie were two of the most classy people I have ever known and will ever know in my lifetime. When I say classy . . . I mean individuals that took not just pride on how they dressed and looked, but how they lived and enjoyed their lives(to the fullest)on this earth. When God paired them together they were the happiest couple you could have come across. They truly set the example of what a true marriage symbolizes. God knew when he called their numbers,they had fulfilled their missions on this earth. (And as it was said that day of his celebration . . . Sister Effie was selfish; she did not want to share Brother Nick with any other woman so she made sure he came back to her.) I'm sure it put a smile on his face that day as it did on ours. (A Note from Rosa Nichols): I remember when I first met my special brother-in-law in New York in the early 80s; I always wondered if I was being too impressive for him or if I was just different because I was Hispanic. (All the days I was there visiting he kept calling me . . . almost sister-in-law). I thought that was interesting and intriguing. He would constantly repeat almost sister-in-law, and would laugh with so much joy; it made me laugh and smile just hearing him. When I met him and Effie I thought to myself, what a great, joyful, full of life, and happy couple. I always knew they were so classy, always very respectful and professional in their ways. My first impression of them was that they truly belonged together; they fit each other like a glove. I remember when he would come visit us in Texas and all the family members knew he was coming; everyone wanted him to stay with them because they knew he would be cooking up a storm and nobody could ever get enough of his cooking and baking. He never cooked/baked the same thing twice . . . only by request. :) His special recipes knocked you out of your socks. . . it had you begging for more. His food was so so good; it didn't matter what he cooked/baked. All I will say . . . is that the people that never sampled any of his food lost out. The family and special friends were extremely lucky to have had such a special chef and unique individual in our lives. His special personality made him unique and put him above the rest. Make no mistake the Lord takes nothing but the best. Uncle Poochie has earned his wings that he worked so hard to obtain. He is now our guardian angel. He may not be here physically, but he will always be around in spirit. We will always cherish all the great laughs, good times, great food recipes, and memories. We are so proud that the Good Lord allowed him in our lives to touch us so profoundly all these years. His unconditional love, the giving of himself to others and always being there for everyone else is what made this special man such a beautiful and unique individual. Brother James' smiles, laughs, great food, and happiness were always so contagious. He made this world a better place with all of his contributions to his family, community, church, and friends. Heaven gained another angel and earth lost another walking true angel. When you think of him always look up and he will be smiling from up above. Jane we love you with all our hearts and you are always in our prayers. (We leave you with a couple of great poems that seem to fit our Brother Nick so well.) (Poem #1) WEEP NOT FOR ME Do not weep for me when I no longer dwell among the wonders of the earth; for my larger self is free, and my soul rejoices on the other side of pain...on the other side of darkness. Do not weep for me, for I am a ray of sunshine that touches your skin, a tropical breeze upon your face, the hush of joy within your heart and the innocence of a baby in his mother’s arms. I am the hope in a darkened night. And, in your hour of need, I will be there to comfort you. I will share your tears, your joys, your fears, your disappointments and your triumphs. Do not weep for me, for I am cradled in the arms of God. I walk with the angels, and hear the music beyond the stars. Do not weep for me, for I am within you; I am peace, love; I am a soft wind that caresses the flowers. I am the calm that follows a raging storm. I am an autumn’s leaf that floats among the garden of God, and I am pure white snow that softly falls upon your hand. Do not weep for me, for I shall never die, as long as you remember me... with a smile and a sigh. (Poem #2) If Tomorrow Starts Without Me If tomorrow starts without me, don’t think we’re far apart, for every time you think of me, please know that I’m in your heart. If tomorrow starts without me, and I’m not there to see, If the sun should rise and find your eyes all filled with tears for me; I wish so much you wouldn’t cry the way you did today, While thinking of the many things we didn’t get to say. I know how much you care for me, and how much I care for you, And each time that you think of me I know you’ll miss me too; But when tomorrow starts without me, please try to understand; That an angel came and called my name and took me by the hand, And said my place was ready in heaven far above, And that I’d have to leave behind all those I dearly love. But as I turned to walk away, a tear fell from my eye, For all my life, I’d always thought I didn’t want to die. I had so much to live for and so much yet to do. It seemed almost impossible that I was leaving you. I thought of all the love we shared and all the fun we had. If I could relive yesterday, I thought, just for a while, I’d say goodbye and hug you and maybe see you smile. But then I fully realized that this could never be, For emptiness and memories would take the place of me. And when I thought of worldly things that I’d miss come tomorrow; I thought of you, and when I did, my heart was filled with sorrow. But when I walked through Heaven’s gates, I felt so much at home. When God looked down and smiled at me, from His great golden throne, He said, “This is eternity and all I’ve promised you, Today your life on earth is past but here it starts anew. I promise no tomorrow, but today will always last. And since each day’s the same, there’s no longing for the past. But you have been so faithful, so trusting, and so true. Though there were times you did some things you knew you shouldn’t do And you have been forgiven and now at last you’re free. So won’t you come and take my hand and share my life with me?” So if tomorrow starts without me, don’t think we’re far apart, For every time you think of me, please know I’m in your heart. Jane may it bring you comfort to know how much your Dad meant to us, was loved and will be missed. Uncle Bill took it very hard knowing that was his special brother that was left and it will only be him of the brothers that is left. But we know he is not suffering anymore; he is reunited with one of his special ladies . . . Ms. Effie and the other special lady of course (Ms. Jane)! I'm sure one day we will see him again! He was the cook in the family. I remember him most wearing his white apron and chef hat cooking everything with his left hand. I always wanted to be left handed just like him. I remember him combing my hair when I was a little girl with three pigtails and three ribbons. I will always love him and will really miss him.
